Ingredients

15 minutes
3 servings
  • To prepare curry paste
  • 7-8garlic pods
  • 1 pieceginger
  • 1 tbspchopped lemon grass roots
  • 1 cupcoriander leaves
  • 1 tspcoriander seeds
  • 1 tspcumin seeds
  • 7-8basil leaves
  • 5-7kadir lime leaves
  • 2green chillies
  • To tastesalt
  • Other ingredients
  • 2 cupsmushrooms
  • 1big onion
  • 1/2 cupchopped carrot
  • 1/2 cupBroccoli
  • 2 cupcoconut milk
  • 3-4lettuce leaves
  • 100 gramtofu
  • 1/2 tsppepper powder
  • 1 cupmix coloured bell peppers
  • 1 tbspoil
  • 1/2 cupFrench beans

Steps

15 minutes
  1. 1

    Take the ingredients of curry paste to a grinder. Add 2 tsp of water and grind it to a paste.

  2. 2

    In a pan, add oil. Add green paste and saute it.

  3. 3

    Now add onions and cook it till translucent. Once done, add all the chopped vegetables and saute it.

  4. 4

    Add coconut milk and simmer on a low dlame. let the vegetables get cooked.

  5. 5

    Add salt, pepper powder and pieces of tofu at last and give a nice stirr.

  6. 6

    Serve alongwith steamed rice.
