Tonight I made chicken roll-ups stuffed with bacon, smoked scamorza cheese, and sage, all served with a creamy pea sauce flavored with a few cubes of bacon. It's a simple and tasty idea.

Lay out the chicken cutlets and top each with a slice of bacon, a slice of smoked scamorza cheese, and a few pieces of sage or a whole leaf if it's large enough.

Roll everything up and secure with toothpicks if you like. Place the roll-ups in a baking dish lined with parchment paper, drizzle with olive oil, season with pepper, and bake at 350°F (180°C) for about 20 minutes.

Meanwhile, cook the peas with a little olive oil, a pinch of salt, and pepper, then blend until smooth to make a cream. If you like, sauté a few cubes of bacon in a skillet to serve with the sauce and roll-ups. Once everything is ready, remove from the oven, top with the pea cream and bacon cubes, and serve.
