Vegan Guava and Ginger Muffins

Welcome to guava season! I love guava; besides having many health benefits, its aroma is delicious, and it's very versatile. Today, I wanted to make these muffins with guava and ginger, as I think the latter gives them a nice fall touch. I found the original recipe on YouTube with strawberries some time ago, but I've made a few changes. You can make them with a wide variety of fruits. They're delicious and super quick!

Today, I wanted to make these muffins with guava and ginger, as I think the latter gives them a nice fall touch. Preheat the oven to 350°F (180°C). Chop the guavas into small pieces. In a bowl, combine the dry ingredients and mix.

Add the guava pieces and mix until all the pieces are coated with the flours.

In another bowl, add the oil and heat for about 20 seconds in the microwave. Add the milk and mix until you have a smooth liquid.

Add the liquids to the flour mixture and combine.

Using a brush or paper towel, spread a little oil on a baking sheet.

With your hands, form the muffins about 2 inches in diameter and 1/2 inch high. Bake for about 20 minutes, until you see they are golden brown on the bottom.
