I love eating kimchi fried rice or also known as kimchi-bokkeum-bap. It has become one of my favourite Korean dishes to eat. I like to order this when I am eating out at a Korean restaurant.

Since lockdown happened, we started to make more Korean cuisine at home, this dish in particular. `We usually have some homemade kimchi at home in our fridge.

I love that this dish as it is versatile and can be made with meat or without meat and any vegetable of your choice. To top off my kimchi fried rice, I love to add a sunny side egg too.

Ingredients

2 servings
  • For the kimchi fried rice:
  • 1-2 tablespoonsvegetable oil (or any cooking oil)
  • 2 knobsunsalted butter
  • 4-5 slicesunsmoked streaky bacon rashers, finely sliced
  • 1brown onion, finely chopped
  • 1 sprigspring onion, finely sliced
  • 2garlic cloves, finely minced or grated
  • 1 cupkimchi, finely sliced
  • 2-3 cupscooled cooked Japanese rice (or white rice, cooled down or left over rice from night before)
  • 1 tablespoonsesame oil
  • 1/4 cupkimchi juice, liquid from the kimchi
  • 1 tablespoongochujang (Korean chili pepper paste), optional if you prefer it hotter
  • 1/3 cupwater, optional (if rice mixture is too dry)
  • Cooking the eggs:
  • 2-3 tablespoonscooking oil, for cooking the egg(s)
  • 1egg (per serving)
  • Garnish:
  • 1egg, fried sunny side up
  • 1/4 stalkspring onions, finely sliced, optional
  • Sprinkle of white sesame seeds, optional

Steps

  1. 1

    Add oil and butter to the wok or pan. On medium heat, add the onions and sauté until almost translucent. Add the garlic and spring onions cook for a minute continuously stirring. Then add the bacon slices and sauté the meat until cooked. Stir frequently to prevent the bacon burning.

    Once bacon has fully cooked, add another knob of butter and add the kimchi and stir to incorporate all of the ingredients. Cook for about 2 minutes. Then reduce heat to medium low and add the rice. Mix everything thoroughly together to evenly coat the rice with the kimchi.

    Add sesame oil, kimchi juice and gochujang (optimal). Stir everything to incorporate all of the flavours. Reduce the heat to low and cover with a lid. Cook for another 5 minutes, stir the rice one more time and turn off the heat. Cover wok with the lid to keep hot.

    To make the fried egg, add cooking oil to a small pan on high heat. Once oil is hot enough crack an egg and add into the pan. Cook the egg to preference (I like my egg yolk runny).

    Place rice in a shallow bowl or plate and the fried egg on top. Garnish with spring onions and sprinkle sesame seeds (optional). Serve and eat immediately while hot.
