Charsiu is a popular chinese BBQ. In many chinese restaurants, this thinly sliced meat is served with noodles or rice. You can also replace chicken with meat of your choice preferably one with fat & thick flesh. Most like to use this recipe with pork belly or anything similar.

  3. 3

Cooking the dish - Turn the oven to grill and preheat to 170°C. Line a baking tray with aluminium foil. Place a small rack on it. Arrange just enough chicken pieces on the rack (Keep excess marinate for glazing). You may need to grill your chicken in batches if your rack is small and it's best to line your baking tray with new aluminum foil when you start with another batch. Grill for 20-30 minutes and check on it every 10 - 15 minutes.

    C. BASTING SAUCE

Microwave maltose (if its too thick), for 20 seconds at a time until it's soft. Add maltose, some oil and excess marinate to a saucepan. Over a very low heat, cook for 3-4 mins until maltose is completely dissolved then turn off the heat.

Maltose can be substituted with honey.

  5. 5

Note: Baste chicken after 15 - 20 mins in the oven then continue to roast for another 10mins or until chicken is cooked. Check it often when basting. To have the right heat, adjust oven temperature accordingly. Once cooked, leave to cool on a cooling rack before serving. To serve, thinly sliced the chicken char siu and enjoy as it is, as side dish or serve with noodles or rice.
