Ingredients

10minutes
Single serving
  • 1large crispy zucchini
  • 1large fresh eggplant
  • 1 Tbspcrushed garlic
  • 1/2 tspblack pepper
  • 1 tspmixed herbs
  • 2 Tbspvegetable oil
  • to taste Salt

Steps

10minutes
  1. 1

    Toss eggplants and zucchini together and mix in the seasoning until evenly distributed

  2. 2

    Heat oil in a shallow saucepan on medium and stir in the garlic until fragrant

  3. 3

    Sautee the vegetables in the heated oil until desired level of doneness

  4. 4

    Enjoy with pasta or as is
