Rinse the fish well and remove any bones and skin. Cut the fish into pieces.

Clean and rinse the shrimp tails.

Generously season all the fish pieces and shrimp with Herbes de Provence, salt, black pepper, spicy olive oil, and extra virgin olive oil.

Assemble the skewers, alternating pieces of fish with shrimp tails.

Add the cherry tomatoes and bake the skewers in a convection oven at 400°F (200°C) for 25 minutes.

To make the green sauce: Boil the potato in pieces.

Wash and thoroughly dry the parsley. Peel the garlic and slice it.

In a food processor, combine the parsley, garlic, extra virgin olive oil, salt, and black pepper. Process on high speed for one minute.

Mash the potato well with a fork and add it to the green sauce.

Mix and adjust salt and pepper to taste if needed.

Meanwhile, clean and cook the Jerusalem artichokes over medium heat with extra virgin olive oil and salt. Add black pepper and parsley at the end of cooking.

To serve, place a layer of Jerusalem artichokes on the plate, then top with the skewers, cherry tomatoes, and green sauce.
