Barazek (Pistachios and sesame cookies)

These are famous Syrian cookies made with sesame seeds on one side and pistachios on the other side!! They are a treat !
The thinner you make the cookie discs, the crispier they turn to be..
I tried them for the first time and made 20 cookies which vanished before I could have a click of them! 🤭 So I am baking them again for my photography 😛😂

Steps

Pre heat the oven at 375 degrees C. Sift the all-purpose flour and sugar, in a chopper mix sugar and butter until creamy.

Now add all the other ingredients and blend till it forms a dough. Sometimes it remains crumby.

Then you can remove it in a bowl and mix with hands. Then make equal size balls. I used a 1/2 Tbsp for equal measurement.

Now make thin discs and coat one side with pistachios and the other side with sesame seeds.

Lay a parchment paper on the baking tray and set the discs in 3x4 order. (If your dough feels soft, freeze the cookies for 5 mins before baking)

Bake for 15 mins. (10 mins lower flame, 3-5 mins upper flame). Keep the baking tray in the middle first, then on the top for upper flame. Keep moving the cookies 🍪 when the upper flame is on.

Cool for 5-10 mins and enjoy the treasure. 😉😋
