I love Gajar Ka halwa especially in the winter with dry fruits like Cashew and almonds added to it as we get the fresh seasonal Red carrot or Desi Gajar.
Steps

Prepare all ingredients as needed.

Heat ghee in a kadhai, add the grated carrot and saute it for 5 minutes or so and add Cardamom powder and continue cooking.

Slowly the water of the carrot will start drying, now add the chopped nuts, keep some for garnishing and mix it and cook for few minutes.

Then add the milk and cook for about 10 minutes or so. The carrot will soften a little by this time and the milk reduced by 80-90%.

Add the condensed milk and mix again and cook for another 5-10 minutes. Keep the flame low and cook till the ghee starts separating. That means your halwa is ready. Turn off the flame. Serve warm garnished with almond and cashew. Bon Appetit!!!

Note : *It's a lightly sweetened halwa. If you want you can add sugar or more condensed milk as per your taste. We prefer lightly sweetened halwa.
