After staying in Kathmandu , I have learnt some tasty , delicious ,easy vegetarian recipes. Nepali style Peanut Salad is a very popular appetite enjoyed all years round in Nepal. It's simple and packed with flavours and texture , making it quick and healthy snack. Peanut provide a variety of vitamins like vitamin E , B- vitamins , micronutrients magnesium , manganese and phosphorus ,also fibers and antioxidants.
I have here used mango ginger, (a type of ginger with aroma of raw mango) harvested from my firm. This flavour enhanced the taste of Peanut Sadheko.

In a medium bowl, add roasted peanuts, chopped onion, sliced garlic cloves, sliced ginger, and green chili

Add spices – cumin powder and chili powder to the bowl with rest of the ingredients.

In a pan take oil and heat. Add red dry chilli, turmeric and salt.

Add chopped tomatoes and saute for 1 minute.

Pour the mix over the bowl with the rest of the ingredients and mix.

Squeeze lime and adjust salt, chili, and other seasonings as needed.
Serve it as a side dish or an appetizer.
