Ingredients

  • For Noodles
  • 2 packetNoodles
  • 4 cupwater
  • 1 teaspoonsalt
  • 1 tablespoonoil
  • For Base
  • 1/2 Cupcabbage chopped
  • 4bulbs of spring onion
  • 1carrot
  • 1Capsicum
  • 7-8Beans
  • 3 tablespoonspring onions green
  • 6-7garlic cloves
  • 1 tspginger
  • 2eggs
  • to tasteSalt
  • 2green chillies optional
  • 1 teaspoonsoya sauce
  • 2 tablespoontomato sauce
  • 3 tablespoonSachewaun Sauce
  • 1 teaspoonSugar
  • 3 tablespoonOil
  • Garnish
  • 1Egg
  • 1 teaspoonoil
  • to tasteSalt
  • 1 pinchred chilli powder
  • As neededSpring onion greens

Steps

  1. 1

    In a deep pan of kadai boil noodles add all the ingredients under noodle section

    Cook till al dein te and strain and run through cold water and keep aside

    Chop finely all the veggies, crush ginger and garlic to make a paste

    In a kadai heat oil, add whites of spring onions and saute till done now add crushed ginger garlic and fry till raw smell goes off

    Add all the veggies now and strir fry, dont add salt now as veggies will lose color, stor fry nicely till they are nice and have some crunch

    Beat two eggs add se salt and red chilli powder, Take veggies on the sides put some oil in between and add the egg mixture

    Mix egg nicely till you get scrambled egg and mix it with veggies now reduce the flame add all the sauces, salt, sugar and mix nicely

    Add noodles and give a toss, mix so that all the veggies egg and noodles are nicely mix add greens of spring onion now and cover for 2-3 mins.

    Take a small pan add some oil and break one egg season with salt and red chilli powder

    In a serving bowl, serve noodles and place egg fry on top garnish with spring onion greens
