In a stand mixer, beat the sugar, vegetable shortening, and lard together on medium speed for 5 minutes.

After 5 minutes, add the vanilla extract and baking soda. Mix for another 2 minutes.

While mixing, separate the egg yolks from the whites. Add only the yolks to the mixture, then add the flour. Mix for 1 more minute. The dough is now ready to shape the polvorones.

Divide the dough into 3 parts, then each part into 2, and continue dividing until you have 48 pieces. Arrange them on 2 baking sheets.

Preheat the oven to 375°F (190°C) before you start mixing. Bake for 20 to 25 minutes, or until golden brown.

After baking, sprinkle with sugar and ground cinnamon.
