This recipe I learn from Maa only I removed the oil from it. It is Healthy and lite.
Steps

Wash all vegetables first then, separate leaves of Fenugreek.

Chopped chillies, ginger and tomato

Keep pan on Stove, let it warm and put mustard seeds, cumin seeds, salt, turmeric and saute or roast once.

Then quickly put little water and let it boil.

Now put green chillies with ginger and saute.

Now put Fenugreek, saute and close the lid of pan and let it cook for some time.

Later put pieces of tomato with Carrots, and saute.

Close the pan or cooking bowl with lid simmer the flame and keep it for few minutes.

Open the lid once and give a stir, and again close the lid, let it cook till it is done.

The Healthy Fenugreek with Carrots are ready to eat with anything, you can also eat it as salad with little sprinkle of lemon juice.
