Bittergourd is a healthy vegetables mainly due to its bitterness. But most people hate this vegetable for the same reason. So some clever ladies found a new method of squeezing out the bitterness by adding salt. However, I personally feel that it is pointless to consume them after removing the bitterness.
So here I am sharing my mum's method where she makes this shake not by squeezing out the bitterness, but by suppressing it with the overpowering taste of jaggery - hence making it even healthier.

Ingredients

20-30 min
2 people
  • 3medium sized bittergourds
  • 1big size onion
  • 2 tbspoil
  • 1/2 tspcumin seeds
  • 1 pinchasafoetida powder
  • 1/4(less) turmeric powder
  • 1/4 tspsalt 1/4 tsp dhanajeera powder
  • 1/4 cupor a little more jaggery

  1. 1

    Peel and cut onion slices. Wash bitter gourd. Peel off the very thick ribs. And then cut them into medium thick slices.

    Heat oil in a thick Pan crackle Cumin and then add asafoetida powder. Add onions and fry till they are translucent. Add salt and turmeric powder. Combine everything well.

    Add karela. Combine well with the onions. Add about 2-3 tbsp water. Cover and cook on low flame.

    Stir frequently and add 2-3 tbsp water everytime the water burns out. Do this process until the karela gets cooked. Add chilli powder, a bit of dhanajeera powder and jaggery.

    Add 2-3 tbsp water to allow the jaggery to melt and get combined evenly. Cook oluntil the water burns out, oil oozes and you see the shiny jaggery syrup floating. Garnish with chopped coriander leaves and serve hot with rotli.
