Fluffy Melt-In-Your-Mouth Muffins

I wanted to eat something sweet, and decided to try making a suitable recipe. Butter is expensive but you can make these muffins easily with margarine.
In the preparations, please let the margarine and eggs warm to room temperature.
Also, please sift the flour and baking powder together beforehand.
When adding ingredients to the mix it's very important to mix in a little at a time and stir well after each addition!

Add the margarine to a bowl and cream with a whisk until pale.

Add the sugar in 2 - 3 batches and mix well after each addition. Keep mixing well until the mixture thickens.

Add the beaten egg in 2 - 3 batches and mix vigorously until the mixture becomes fluffy. Don't add too much egg at once or you risk the mixture separating.

Switch to a rubber spatula and add 1/3 of the milk. Blend well before sifting in 1/3 of the flour and baking powder.

Repeat this step twice more until you have a thick and fluffy completed plain batter You can also make coffee and matcha batter from this.

Pour the mixture into your muffin cups until about 70% full. Sprinkle on some granulated sugar, cinnamon sugar or whatever you plan to top your muffins with, and put in the oven. Bake for 25 minutes or until golden brown at 180°C.

When they're just done, the outside will be crispy with a soft and fluffy center that melts in your mouth.

I made half of these with cinnamon sugar and half with granulated sugar.
