I had some chicken breast when I had little time to cook... I made it in a hurry but my family loved it.

Don't put in any oil at Step 2. If there's not enough cooking liquid in the pan at Step 5, add a little water, then reduce down.

Ingredients

  1. 2breasts or thighs Chicken (thigh or breast meat)
  2. 5 tbspSake
  3. 3 tbspeach Soy sauce, mayonnaise
  4. 2to 3 tablespoons Sugar

Cooking Instructions

    Pierce the chicken several times with a fork, and season with salt and pepper (not listed in the ingredients) on both sides. Mix the seasoning ingredients together.

    Heat some oil in a frying pan over medium heat and cook the chicken skin side down until browned.

    When the skin side is browned, turn the chicken over and add the flavoring ingredients. Put on a lid and cook over low heat for 8 to 10 minutes.

    Take the lid off, set the heat to low-medium and coat the chicken with the sauce until shiny, 2-3 minutes per side, and it's done.

  5. 5

    Take out and slice. If the chicken isn't cooked all the way through, add it back to the pan and simmer for a while longer.
