Cooking Instructions

Wash the bulgur well and blend it in a food processor until it holds together. Add the ground meat for kibbeh, spices, and salt, and mix well until combined.

Meanwhile, sauté the onions with the ground meat and spices for the filling.

Grease a baking dish with oil. Spread half of the kibbeh mixture evenly in the dish and press it down firmly. Add the filling in the middle, spreading it evenly over the first layer. Cover with the remaining kibbeh mixture and press down to seal.

Score the top into diamond shapes with a knife, similar to baklava, and brush the surface with oil.

Press cashew nuts into the top if desired.

Preheat the oven to 430°F (220°C) and bake on the lower rack for about 15–20 minutes.

Then turn on the broiler to brown the top until golden.
