Who doesn’t have half bags of fresh vegetables knocking around after Christmas Day and Boxing Day? At this stage it’s more than likely heading straight for the bin...but this simple little recipe using leftover vegetables and a jar of shop bought curry sauce....yes shop bought !!! Sometimes it’s nice to pull out a jar or tin of something from the cupboard....it’s a lovely thought that chefs knock up everything from scratch all the time....but sometimes...Just sometimes life needs to be easy.
A simple dish that costs about a quid...

Ingredients

Five minutes prep.
4-6 servings
  • Leftover fresh vegetables. I’ve used sprouts and carrots
  • Litrewater
  • Nice chunk of butter
  • Jarcurry sauce
  • Spring onions to garnish

Steps

Five minutes prep.
  1. 1

    Wash and roughly chop the vegetables. Place in a large heated stock pot with a nice chunk of butter and gently sauté until the vegetables absorbs all of the butter.

    Fill your pot with just water, no stock is required as the natural sweetness of the vegetables comes through. Rapidly bring to the boil then cover and cook until vegetables are soft.

    When the vegetables are soft remove from the heat and leave until cooled down completely. Blend the soup until all the solids have gone, add the curry sauce and leave on simmer until warmed through. Season to taste, but to be honest it won’t require any salt or pepper. Garnish with spring onions and serve.
