Ingredients

45 minutes
4-6 servings
  1. 1 Package(approx 3lb) chicken thighs
  2. 6(approx 1lb) tomatillos
  3. 1large onion- quartered
  4. 4 clovesgarlic
  5. 2bay leaves
  6. 1 tbspchicken bouillon or 2 cubes
  7. 1 TspSalt
  8. 1/2 tsppepper
  9. 1 tbsporegano
  10. 1 handfulfresh cilantro
  11. 3 (15 oz)cans of hominy
  12. 3-4jalapenos
  13. Water

Cooking Instructions

    Rinse clean the chicken, tomatillos, and jalapenos

  2. 2

    Grab a large pot and throw in all of the ingredients listed above except for the cilantro and hominy. Fill pot with water until contents are covered.

    Bring to a boil; reduce heat to medium/high and cook for 40 min.

    Remove chicken thighs & bay leaves. Drain the juice from your pot and set aside. You should now have all of the solid pieces from the pot (minus the chicken thighs.) Throw this into your food processor or blender.

    Add the cilantro and two ladles of the drained broth into the processor; blend well.

  6. 6

    Once your chicken has cooled, remove any bones and pull apart (shred).

  7. 7

    Drain and rinse your three cans of hominy.

    Combine your blended mixture, shredded chicken, and the broth you set aside.. back into the pot. Either heat on medium/low until ready to serve.. or store for later grubbing.

A little about me....I grew up learning only American dishes (Fried chicken, mashed potatoes etc); upon marrying a Hispanic man... I soon found out I needed to learn many dishes I'd never heard of before! Together we have a very large and hungry family, so I went to work! After much research and practice.. I learned (and am still learning) much accepted tweaked recipes that have the full stamp of approval from the true connoisseurs of authentic Mexican Food. Enjoy!
