Ingredients

8-10 people
  • 1-1/2 kgChicken
  • 2 tbspnvinegar
  • 1 kgbasmati rice (soaked in water for at least 1/2 an hour)
  • 1/2 kgpotatoes (cut into large chunks)
  • 1-1/2 Cupsoil or as required
  • 4Onions (sliced)
  • 2 tspgarlic paste
  • 2 tspginger paste
  • 4tomatoes (chopped)
  • 10-15Prune (Aaloobukharay)
  • 2 tspSalt or to taste
  • 2 tspred chili powder
  • 2 tspred chilli flakes
  • 1/2 tspturmeric powder
  • 1/2 tspgaram masala powder
  • 10 cloves(Laung)
  • 6green cardamoms
  • 10 pieceblack pepper
  • 1 tbspncrushed Cumin
  • 1 tbspncrushed coriander
  • 2Cinnamon sticks
  • 2black Cardamom pods
  • 2bay leaves
  • 1-1/2 CupsYogurt
  • 6green chilies
  • 1 tbspnlemon juice
  • 1/2 Cupfresh coriander leaves
  • 1/2 Cupmint leaves
  • 4 tspsalt or to taste
  • 2Star anise (badiyan ka phool)
  • Orange food coloring as required
  • 1 tbspnJulienne cut ginger
  • 2tomatoes sliced
  • 3 tbspnmint leaves
  • Coal for smoke (optional)
  • Few drops Biryani essence optional

Steps

    Chicken ko ache se wash kar ke vinegar laga ke basket mein rakh dain.

    Ab yogurt mein,red chilli powder, red chilli flakes, crushed cumin, salt, turmeric powder, garam masala powder, crushed coriander, ginger n garlic paste, 3 green chillies paste, lemon juice, pinch of yellow food colour mix kar ke chicken ko marinade kar ke half hour ke liye rakh dain.(Mene Raat mein hi marinade kar dia tha).

    Slice the onion and fry it in oil until it is golden brown. Take out 1/2 of it and keep aside.

    In remaining fried onions add marinated chicken, chopped tomatoes, prunes (Aaloobukharay), cloves, green cardamoms, Black Pepper, cinnamon sticks, black cardamom pods and bay leaves and cook well.

    Cook this until the tomatoes are tender and the water is dry.

  6. 6

    On other side boil the water add 1 tsp yellow food colour and boil potatoes until half done.

  7. 7

    Now fry potatoes until light golden,take them out set a side. potatoes should be 80% done.

  8. 8

    Now add chopped coriander, mints and the potatoes to the chicken. Simmer for 2, 3 minutes. Your chicken curry is done.

    Coal ko stove per solga kar steel bowl mein rakh ke chicken mein coal wala bowl rakh ke 2-3 drops oil dal ke cover kar ke rakh dain 5 minutes take achy se smokey ho jye.

    Boil the rice with salt, star anise,few drops vinegar and drain the water off when the rice is half done.

    Layer the curry with the rice in a pot in one on one layers and tomato slices, Julienne cut ginger coriander leaves.

    Sprinkle the food color, fried onions, and chopped coriander, mint leaves, green chilli slices, Julienne ginger, few drops Biryani essence on top of the last layer.

    Close the lid tightly making sure no steam passes out of the pot and cook on low heat until the rice is done. Switch off the gas and let the biryani stay covered for another 15 minutes..

    Gently mix it before serving.

    Serve hot with raita and salad enjoy 😋
