I had some pancake mix left over and tried various things to be able to make cakes with only small amounts.

Steamed Bun using Pancake Mix and a Microwave

Cooking Instructions

Mix all of the ingredients into a container. To break up all of the lumps, it's easiest to use a spoon.

Cover the container lightly with plastic wrap. Do not wrap the container completely to the bottom. Leave some space so that it's not airtight.

Microwave at 500W for 2 minutes.

After 2 minutes it should expand like this. Quickly flip it over and remove from the container. Wrap it in a paper towel.

This is what the ingredients look like when you add 2 Tbs of instant cocoa powder. Since instant cocoa powder contains sugar, you don't need to add as much sugar as in the ingredients list.

After 2 minutes it will expand this much.

I used the standard amount and poured it into mini pound cake cups. I then added 1 Tbs of yogurt with kanten.

Gather all 4 cakes together and loosely wrap. Microwave at 500W for 2 minutes. They expanded just about double the original size.

After cooling and wrapping, they were still light and fluffy the next day.

This is what adding 1 Tbs of pure cocoa and 1 heaping Tbs of sugar to the standard ingredients. This may be more suited to adult tastes?
