I had some pancake mix left over and tried various things to be able to make cakes with only small amounts.

When plain it tastes like a simple sponge. It is also good when you add chocolate or raisins. When wrapping the container, make sure there is some space at the top. If you wrap it too tightly, the container will deform because of the heat. Recipe by Ponchobi-ta

Ingredients

1 serving
  1. 50 gramsHotcake(Pancake) Mix
  2. 1 tbspSugar
  3. 1 tspVegetable oil
  4. 1Egg
  5. 1 tbspYogurt containing agar

Cooking Instructions

    Mix all of the ingredients into a container. To break up all of the lumps, it's easiest to use a spoon.

    Cover the container lightly with plastic wrap. Do not wrap the container completely to the bottom. Leave some space so that it's not airtight.

    Microwave at 500W for 2 minutes.

    After 2 minutes it should expand like this. Quickly flip it over and remove from the container. Wrap it in a paper towel.

    This is what it will look like after removal.

    This is what the ingredients look like when you add 2 Tbs of instant cocoa powder. Since instant cocoa powder contains sugar, you don't need to add as much sugar as in the ingredients list.

    After 2 minutes it will expand this much.

    I used the standard amount and poured it into mini pound cake cups. I then added 1 Tbs of yogurt with kanten.

    Gather all 4 cakes together and loosely wrap. Microwave at 500W for 2 minutes. They expanded just about double the original size.

    After cooling and wrapping, they were still light and fluffy the next day.

    This is what adding 1 Tbs of pure cocoa and 1 heaping Tbs of sugar to the standard ingredients. This may be more suited to adult tastes?
