Soba was the only thing I could eat when I used to get morning sickness. I got tired of the usual way of eating it, so I adapted a "Soy Milk Noodles" recipe to make dipping sauce for soba.

It's easy - just mix the ingredients. You can adjust the amount of soy milk as needed depending on the strength of your mentsuyu. Recipe by Kechauru recipe.

Ingredients

1 serving
  1. 3 tbspor more Soy milk
  2. 1 tbspGround white sesame seeds
  3. 1 tbspMentsuyu (3x concentrate)
  4. 1 dashRa-yu

Cooking Instructions

    Boil noodles (any kind you like), and rinse with cold water. Mix together all the ingredients except the ra-yu. Then add ra-yu (as much as you like).

    I like to add an ice cube to the dipping sauce. It keeps the sauce cool while it melts, thinning the sauce as you eat.

    On cold days, this is also delicious as a sauce for hot udon (or soba). (See next step)

    To make a warm soup for the noodles: Dilute the mentsuyu with 1 part hot water and 2 parts heated soy milk. Top with ground sesame seeds and ra-yu.
