Lacto fermentation is good for gut flora,and with the limes,and including rinds become softened and edible in the process to get many benefits Alhamdulillah a natural process of a kind of pickling ad say not sure of actual origins but this styl is mainly found in much warmer countries , eg particular to east African is where I learnt this .nevertheless it's origins ,it can be made anywhere I gues! , But it's vitamin c rich and lovly powder ed spices ingreds such as paprika pwdr,chilli also vit c rich! ,tumeric are all very healthy and handy to Hav around cozcthese dried powders stay a long time in closed containers Alhamdulillah. This achari is gr8 for almost any savory meal esp those who prefer lift of flavors in the ordinary everyday meals.may takes bit more time to be ready if in winter eg 2 to 3 weeks deoending on environment and needs to shake and reshake at least evry day.but its worth the wait !u need warm dry place but in summer a week is suffient

Ingreds in list(nb.first pic is just for sight, as raw mangoes can be another lovly type of achari to try!). these quantities are approx quantities,mostly depends esp how much limes u used in this recipe.

Then slice of ends off lime,then cube them.and make more quaters, or cubes etc, if limes are bit biger.use DRY, see through (preferably not glass) container. at this stage as need to shake reshakes often and place near heater

LEVEL amount of lime juice needed this stage and on shakes and on time lapse the quantity decrease but just refil ONCE,if level falls in first few days o mor. coz it may interrupt process of thickening,can use squize or add shop bought but please Choose good quality one.if can get with more carbohydrate content (pls CHECK in the ingreds LABLE of the lemon or lime juice)

Check ever few days for salt but shud be ok pls dont over salt as use mayb more of preservative..but can add bit more chilli or even use fresh sliced crushed chillies(not actually tried) the important is to not put any water in or any aded unknowns in case interrupts fermentation.esp water may cause rott. The days and 1st week or 9th day or so inshaallah u will start seeing thickening and can take one lime use dry tools to check for soften

If lime rind is softer then leave until softer say another week or so(shudnt take too much more if kept in near warm).place.u can the hav a taster test add to your meal..can then transfer into medium.small lid jars or smaller lid container.may hav upto 6 of these perhaps even enof to share one or two or more InshaAllah!..bismillah enjoy

Tip:if u see some funny bubble or smell just re shake coz this help in remove air and any gases due to process and while filling container only fill to and half or 3 /4 leave some space from top
