Berry Confiture (Jam)

I bought some mixed berries (raspberries, cranberries, black berries, dark cherries, and blueberries) to mix up with some seasonal strawberries.
This is made for long-term storage, so it's a bit heavy on the sugar. Feel free to adjust as needed.

Remove the stems of the strawberries, wash, and put into a pot. Add the mixed berries and sugar and let sit for 1-2 hours until the water draws out.

Turn the heat to low-medium. Once it begins to boil, skim off the scum carefully, and simmer while stirring for 10-15 minutes. Mash any large strawberries.

Add the lemon juice and lightly mix. Check the taste and enjoy.

Store in a sterilized container in the refrigerator.
