Gajjar halwa

My mom she use to make GAJAR HALWA in every winter in large quantity and she save it for a month or more
Gajar halwa is winter special dessert, made with carrots, milk,sugar, clarified butter (ghee) and cardamom . In traditional carrots halwa, grated carrots and milk evaporated slowly which makes tiny granules of milk solids. So you get that granular texture while eating it .
I made it with condensed milk, it makes it creamy and smooth texture.
I didn't grat the carrots. I boiled them in water and mashed with a masher.
It takes less effort but its taste is more then other traditional recipes.

Take Washed and peeled carrots,add in pan with water and let it cook until nicely tender

Reduce the water then mashed with masher

Add condensed milk and mix well, let it simmer, stir constantly. Cook till it dried.

Add ghee and cardamom seeds, again stirr constantly until get the best halwa consistency

Garnish with nuts and serve hot or cold,I like warm.
