Baby Corn Massala

Firstly,saute baby corn in 3tbsp oil for a minute. Transfer to a plate and keep aside.

In the same pan heat 3tsp oil and saute bay leaf, cinnamon and cumin seeds till it turns aromatic.

Add onion and saute well. Also saute ginger garlic paste till the raw aroma disappears.

Further add tomato pulp. To prepare tomato pulp blend 3 tomatoes.

Mix well, cook for 15 minutes or the tomato puree thickens.

Further add turmeric, red chilli powder, coriander powder, cumin powder and salt. Saute on low flame till the oil separates.

Now add 1 cup water and cashew paste. To prepare cashew paste, soak 5 cashew in 1/4 cup hot water and blend to smooth paste. Mix well.

Add in roasted baby corn and stir well. Cover and cook for 15 minutes or till baby corn cooks well.

Further add garam massala and coriander leaves. Mix well

Finally, serve baby corn massala with roti or naan.
