I always buy mushrooms and always forget them in the fridge :( BUT I always save them before they go “very” bad. Today, I made this mushroom soup that turned out very tasty!

I always buy mushrooms and always forget them in the fridge :( BUT I always save them before they go “very” bad. Today, I made this mushroom soup that turned out very tasty!

In a saucepan, sautée the mushroom and garlic with butter or coconut oil until they’re golden brown

Add the spices (allspice, salt, black pepper and paprika or ras el hanout)

In a glass mix the milk with the flour and pour over the cooked mushroom while mixing with a whisk
- 4
Add a bit of water (almost half a glass). The texture should be a bit creamy. Not too thick not too liquidy

Add the truffle oil, chopped parsley and oregano. Let it simmer for 2 minutes.

Serve with a slice of bread and a sprinkle of cheese on top.
