Youtiao - Chinese Fried Bread

I wanted to eat Youtiao! But since I can't easily get my hands on them, I decided to try making them. I compared various recipes there were many different variations like; using Ammonium bicarbonate, and leaving it to rest over night, but I wanted to make something that was easy to make with a leavening agent I had in my house.
In step 3, the dough will still be a bit rough and a bit hard but that is okay. Make sure to let the dough rest properly and and it will become very elastic. I also made soy milk soupto go with this, but my husband eats it as is. Recipe by kiwicafe

Cooking Instructions

Add the dry ingredients in a bowl and without using a spatula, mix them in a circular motion.

Add in the water and mix in a circular motion with cooking chopsticks. Once it's been mixed well, scrape off the ends of the chopsticks and knead with your hands.

Once the dough has stopped sticking to your hands and comes together, cover it with plastic wrap and let it sit for 30 minutes.

Once it's done resting, knead it a little bit more till it becomes shiny and the surface it smooth. Then roll it out to a 1cm thickness.

Fold the dough into thirds and shape it into a rectangular shape. Place it on a baking tray coated in vegetable oil, cover it with plastic wrap, and let it sit overnight in the refrigerator.

Once the dough has returned to room temperature, gently roll it out, divide into 8 portions and knead each into 2 pieces.

Take cooking chopsticks and push down firmly in the center of the pieces. Turn them over and do the same for the backside.

While pulling on the ends, twist them. Deep fry them in oil at 350℉ (170℃), while skimming off any scum, until they reach a good color.

I had leftover snow cone syrup and leftover pumpkin paste and wondered if I could use these up in the steamed bread.It is hard to mix the mayonnaise and water, so I recommend adding a small amount of water at a time. Personally, I mix them all at once even though it is hard to do. Either ways would make the bread fluffy and chewy. Also, you will not taste the mayonnaise at all, so don't worry. I really wanted to eat some chewy steamed bread but when I tried to make it with shiratamako, it just wouldn't mix.I should use it for dango instead, so I tried with bread flour and it went quite well.・Pancake mix is a little sweet, whereas rice flour is not, so it needs a bit more sugar than the recipes that use 100% pancake mix.・These have a really light taste so they go well with jam or something similar. I used to make carrot steamed bread as baby food for my eldest daughter when she was young. I was using pancake mix everyday but now I use cake flour to save money. The photo shows the ones with soy milk and brown sugar.In Step 4, make sure the kitchen towel (to prevent water dripping onto the bread) is tightly wrung or it will touch the bread. For those using a gas range, pay extra attention. If you are using shallow ramekins, I suggest using a steamer rack (available at 100 yen shops). Using ramekins works best and helps the bread to expand fully.I made them less sweet so adjust to taste.It would be great if you could let me what way you decide to make these.
