For Peri Peri powder - in a bowl add red chilli powder, cinnamon powder, ginger powder, garlic powder, rock salt and salt. Mix and add it to a bottle and give a good shake. The Peri Peri powder is ready

For hot garlic sauce - soak the whole red chillies in 1/4 cup water for 5-8 mins. In a blender add the chillies, the garlic and make a paste. In a wok heat oil, add the paste and cook till oil surfaces. Add vinegar, tomato ketchup, soya sauce, sugar and salt. Stir and set aside

Chop the vegetable and onion fine and add in a bowl. Add mayonnaise, peri peri powder, hot garlic sauce, crumbled paneer, chopped green chilies, sweetcorn, grated cheese, salt and mix well.

Lay the breads and apply with the back of the spoon the filling. Fold the bread

Apply butter on the top of the bread. Heat a tawa and add 2 Tbsp butter. Place the bread. On low flame fry till crisp, turn the side and fry till crisp. Set aside. Repeat for the other one.

Slice the toast sandwich. Garnish more grated cheese

Plate and enjoy with coriander-mint Chutney and Hot Chilli garlic sauce.
