Usually rempeyek in Indonesia made from rice flour batter and adding with peanuts, dry anchovies, or yellow bean. But since I don’t have any of them on hands, this time I am going to make my own rempeyek using sliced shallots and chopped chilies. My mom made this for me and my sister all the time, back then when we’re young. And we loved it very much. The texture is crunchy, and the chili really gives a spicy kick that makes us can’t stop eating. For my beloved mom, thanks mom for the recipe. And today I have a change to make it again.

Ingredients

  • 2 cupsrice flour
  • 1 tbsptapioca flour
  • 1egg
  • 1/2 tbspcoriander powder
  • 1 tspgarlic powder
  • 1 tsp turmeric powder
  • 1 tspchicken powder
  • Salt to taste
  • Water 400-500 ml
  • 7 pieces of kafir lime leaves (thinly slices)
  • Chopped Thai chili
  • 1/2 cupor more slices shallots (fresh or baked one) I am using the baked one from Asian store
  • Oil for deep frying

Steps

  1. 1

    In a large mixing bowl add all flour, egg, chicken powder, turmeric, garlic, salt and kafir lime leaves. Add water little by little and mix the mixture until well blended. The consistency just same as pancake batter.

    Heat up the oil in a deep frying pan at least 1 and half inches tall in a medium heat.

    Add the shallots and chili into the batter. Mix well.

    Heat up the single egg nonstick frying pan in a low heat. Spray with cooking spray the wipes up with paper towel.

  5. 5

    When the two of pans are hot enough. Then spoon 1 spoon batter and pour into the small pan. Swirls the pan to create circle shape. Let it cook for 1 minutes.

    When the edges are dry and loose, transfer to the big pan. And continue cook until it turn into golden brown.

    Repeat the process until all the batter gone. Let it cool and keep them in an airtight container. Enjoy!
