It's simple leafy curry using khada saag.
Saag may b stir fried or used into mild gravy...Its fabulous in all respect.but today,we aur going for curry which is healthy, taste simple n it's old dish of Odisha n Bengal as well.
My mom used it several ways but what I m going to do is mustard paste special....
Many more variations will b into media later...but let's get started...so thanx mom it's you behind....

Ingredients

45 mins
5 servings
  • As required Amaranthus stem leaves
  • 1 tbsp Mustard seeds dipped into water bowl
  • 1 tbsp Jeera same dipped into water bowl
  • 5-6 Red chilli
  • 1Onion medium
  • 6-7 clovesGarlic
  • as requiredOil refined/mustard oil
  • For veggies addition
  • as required Arbi,alu,eggplant,yam, pumpkin
  • as requiredWadi fried ones in odisha(badi as it is called)
  • as neededSalt, turmeric preference wise

Steps

    Now cut the leaves apart n the roots n strong stems apart...
    Cut into thin leaves not very fine.its gud if leaves n bit big...so that it's not mushy later on

  2. 2

    Grind into fine paste your dipped items like mustard seeds,jeera,red chilli, onion,garlic cloves

  3. 3

    Pour oil into pan,allow it heat put all veggies n you wl find water of veggies...so cover it for say 10 mins.In between just check n stir it,..

  4. 4

    Now,the veggies must b done n 90 percent cooked.add masala paste n fry for while make sure you HV watery content more in the curry...so that mustard paste does not taste bitter,

    Mustard curry never cooked more than 3 mins in oil...it tends to b bitter...

  6. 6

    So alwaz see but water there...cover n simmer for 10 mins...it's done

  7. 7

    You need not add garam masala or garnish items.

    Just temper with oil n mustard seeds,along with sliced or finely chopped onions....cover it

  9. 9

    It's ready to be served

    Tips I HV used unequal propertion of mustard seeds n jeera to show the rule of mustard in mustard gravy...
