My amma use to say anday ki sabzi and my miya say anda bhujiaa... keh kuch bhi lo, it is a khageena or scrambled egg 😄

Heat up the pot and pour oil. Add onion and potato together and fry till potato cook and onion turns pink and soft

Crack 2 eggs in a bowl and whip it well either with fork or whisk

If potato is sticking, just sprinkle the water and cover it to cook for a while.

Whip an egg well and pour egg mixture on potato and onions.

Wait for a while, eggs need to settle it down. With very light hand start breaking egg with short intervals. Move your spatula left to right and up and down. It will leave the pot automatically. Once whole egg scrambling done. Just cook for 10 seconds more for nice yellow golden color.

Dish it out and serve with toasted bread and your favorite jam. Enjoy your breakfast 🍳
