Red Sauce Pasta with Olives

An excellent one pot meal for Dinner or even for a Brunch. In this particular version of Red Pasta, I have used Tomato paste along with chopped Tomatoes and lots of sliced Green Olives. So as a matter of fact, that makes it a bit tangy and hence perfectly balanced by the Olives. All in all a great meal for the whole family. I have also used Capsicum as it was handy but you can very well omit that. With a few spices, this Pasta is my go to dish whenever iam tired or want to make something easy and quick. Even if Tomatoes are not available at home, only Tomato paste will be sufficient. And vice versa too. So let's get started. Happy Cooking with Zee!

Boil Pasta al dente with some Salt and Oil. Drain and set aside.

In the meantime, heat Oil in a kadai. Saute Garlic and Onions together. Also add Green Onions, Spices and Tomatoes too. Saute for a few minutes. Now add the sliced Capsicum and the Tomato paste.

Mix well and cook for about 3-4 minutes. And then finally add the boiled Pasta. Add Red Chilli flakes too. Toss well. Garnish with freshly chopped Coriander Leaves and lots of sliced Olives. Serve hot immediately. Enjoy!
