Egg Masala curry

First of all we will boil the eggs, peel the shell and then prick it with the help of fork.
Then we will shallow fry the eggs in pan by adding oil and pinch of turmeric and red chilli powder. - 2

Now in a wok or pan heat oil add cumin and mustard seeds,then add ginger garlic paste sauté for seconds and then add chopped onion to the oil,sauté till the onion becomes translucent.

Now add red chilli powder,turmeric powder,cumin powder and garam masala powder and salt to taste mix it nicely then add chopped tomatoes mix it all well,cover it and cook it till tomatoes become mushy and oil start separating.

Then add Katsura methi and coconut milk in the masala,before pouring the coconut milk to the pan reduce the heat.

Bring the mixture to the boil now add eggs to the masala,sprinkle some chopped coriander leaves and 2-3 slit green chillis.cook for more 5 minutes an low heat.

Finally your delicious Egg Masala Curry is ready to serve.serve it hot with steamed rice or paratha. Enjoy
