This is originally my mother's recipe.
I love eating Bharwa Baigan and so does my daughter. Initially, when she was small (and I was just a learner in cooking) she always demanded me to make this recipe, saying, "Nani ke haath ke Bharwa Baigan khane hai", and so I learned this recipe from my mom. Even now when we visit my mom, she prepares this recipe in advance and always gives us a "dabba" full of this on the return trip to home. (मां का प्यार)
Today I'm sharing this recipe of mine. It is very easy to make with just some spices, potatoes and eggplants. I used purple eggplants.
The aroma is so nice and you can serve this dish with puri, paratha aur roti.

Wash brinjals and potatoes. Peel the potato skin and wipe both brinjals and potatoes dry with a towel.

Make a slit from the bottom to the top of the brinjal without cutting it into pieces. Similarly cut the potatoes.

Roast all the spices on a medium flame and put it in a mixer grinder and make a spice powder.

Take spice powder out in a bowl and mix 1 tsp of oil. It helps in binding the masala together and helps to keep it intact in brinjal while cooking. Don't skip this step.

Fill the spice powder generously in the brinjal and potatoes.

Heat 1tbsp oil in a heavy bottom pan and keep all the brinjal and potatoes in a pan and keep it cooking covered in low flame. Check a couple of times and stir the veggies. Cover and then continue to cook.

Once the stuffed baingan are cooked and softened, add the remaining spice powder mix.

Saute it well for a min and serve the bharwa baigan with roti, paratha or puri.
