No Need for Boiling Easy Microwaved Potato Salad!
I don't really like potato salad, but I wanted to come up with one that even I could eat and came up with this.
It's also delicious with mandarin oranges.
Be sure to thoroughly bring out the moisture of the onions and cucumbers with salt.
If it's too watery, it'll be all messed up!
If you use spring harvest onions, it will be sweeter.
Adding vinegar will make it easier to eat, so decrease the mayonnaise in relation to the vinegar. Recipe by Saya cooking

Cooking Instructions

Cut the vegetables. Cut the potatoes into 2 cm wedges, the carrots into thin wedges, and thinly slice the cucumbers and onions.

Sprinkle salt on the cucumbers and onions to bring out the moisture.

In the microwave , heat the lightly wrapped potatoes (500 W for 5 minutes) and carrots (500 W for 2 minutes). Mash the potatoes while hot!

Season the potatoes with salt and pepper, add the vinegar, and mix. Squeeze out the cucumbers and onions from Step 2, then add to the cooled Step 3. Add the mayonnaise and mix.

Transfer to a plate and it's done. Serve with lettuce and cherry tomatoes.
