Cabbage Curry

Did some catering on Saturday so I have a whole bunch of chicken gravy from the oven-roasted chicken tikka. So I decided to elevate my cabbage. Super, super delicious and 'chickeny'. The ugali is hyper-protein ugali so no need for a protein food. The chicken gravy also contained yoghurt and, of course, the chicken juices have protein too.

Caramelise the onions in the chicken fat.

Add the tomatoes and cook until they break down.

Add the herb and spices and cook until they emit their aroma.

Add your cabbage and cook it down until it is in between soft and crunchy (depends on cabbage age - keep checking).

Check for salt at this stage because your gravy already had salt. Add if you need to.

Perfect with rice and ugali.
