Ingredients

25-30 min
  1. 400 gcoarsely grated zucchini/2 apples
  2. 250 gflour (50:50 all-purpose flour and whole wheat flour)
  3. 3eggs
  4. 170 gbrown sugar
  5. 150 mloil
  6. 1,5 tspbaking powder
  7. 1 tspground cinnamon
  8. 1 tspbaking soda
  9. 1/2 tspsalt
  10. 1 tspground ginger
  11. 1/2 tspground nutmeg
  12. 1lemon: juice and zest
  13. 100 gwalnuts
  14. 100 gdried cranberries
  15. On the top:
  16. 1 packpistachio pudding
  17. 300 mlsoy milk + water for mixing pudding powder + 2 tbsp sugar
  18. roasted almond flakes
  19. Baking tray: 33 x 26 cm

Steps

25-30 min
  1. 1

    Use zucchini or apples, if you don't have zucchini. Grate it in bigger stripes- leave it to rest so it will produce juice.

  2. 2

    Chop cranberries and walnuts. Beat eggs with brown sugar and add oil. Sift flours and all the spices. Add baking soda and lemon zest.

  3. 3

    Mix everything. Squeeze zucchini out and add it to the batter, mix all the ingredients.

  4. 4

    Bake with parchment paper. Bake it at 180-200 at 25-30 min.

  5. 5

    Roast almond flakes and prepare the pistachio pudding.

  6. 6

    Once the cake is ready and has cooled down coat it with pistachio pudding and sprinkle almond flakes on the top.
