La Zhao (Chinese Red Chili Pepper Mix)

I learned how to make this from my Chinese in-laws. The "la" or "la-zhao" is actually the "la" of la-yu or ra-yu (hot chili sesame oil).

Ideally the oil should foam up and you should hear a sizzling sound when you pour the oil over the chili peppers. Mix rapidly or the chili peppers will burn and blacken. Don't put your face too near the bowl when you are mixing up the chili peppers, or the fumes will make you regret it! If you add extra oil, you can make ra-yu at the same time. Recipe by kou2091

Steps

  1. 1

    Put the dried red chili pepper flakes in a shallow bowl. You can use chili powder, or flakes as shown in the photo. We usually use flakes.

    Add enough oil to cover the chili peppers in Step 1 into a small pan. Heat the oil until the surface starts to become wavy. (The oil should feel warm when you hold your hand about 15 cm above the surface.)

    Pour the hot oil over the chili pepper flakes a little at a time while you mix rapidly.
