Tuna Salad Avocado Sandwiches

This sandwich was so good. The pesto combined with the tuna balanced well. The avocado and English peas added to the flavour profile. I think I used the right amount of each ingredient as not to overwhelm anyone thing making it a one note flavour.

I had plenty leftover for more sandwiches at least 6 sandwiches in total. Just add bread.

Ingredients

6 people
  1. Tuna and Extras
  2. 3 canswhite albacore tuna packed in water
  3. 4 slicesbread
  4. To taste iceberg lettuce
  5. 1Roma tomato
  6. 3boiled eggs
  7. Dressing
  8. 2-1/2 tablespoonssweet salad cubes
  9. As neededHungarian paprika
  10. 1 tablespoonssliced black ripened olive
  11. 1 tablespoonsstone ground Dijon mustard
  12. 1/4 cupmayonnaise
  13. 1-1/2 tablespoonscapers
  14. 1 teaspoondill weed
  15. 1-1/2 tablespoonpesto
  16. To taste salt, avocado
  17. As neededlime juice to coat the Haas avocado
  18. 1medium Haas avocado
  19. 1/2 cupfrozen English peas

Cooking Instructions

    Take the avocado and mash it up leaving it just a little bit chunky. Mix the mashed avocado with lime juice. Take all the dressing ingredients and mix together.

    It should be like a greenish blue cheese dressing, due to the peas and bitty chunks of avocado. Don't add peas till the end.

    Dice the boiled eggs. Drain the tuna. Mix the eggs and the tuna. Toast the bread.

    Slice the tomatoes and set aside. Pull the lettuce and set aside.

  5. 5

    Mix the dressing and the tuna egg mixture. Add English peas. Add paprika.

  6. 6

    Add to the bread and serve with, lettuce and tomato on the sandwiches. I hope you enjoy!!!!
