Healthy Kofta with Tomato Sauce

Prepare the kofta: In a food processor, blend the onion and parsley. Place the ground beef in a bowl, add the onion and parsley mixture, salt, and black pepper, and mix well. Shape the mixture into small balls. Arrange the kofta balls on a baking sheet suitable for the oven. Preheat the oven to high heat. Bake the kofta balls until browned.

Prepare the sauce: In a pot over medium heat, add the oil and heat slightly. Add the onion and garlic and sauté briefly. Add the bell peppers and cook for about 2 minutes. Add the tomatoes, water, and tomato paste. Add black pepper and adjust the salt. Reduce the heat, cover the pot, and simmer for 5 minutes until the sauce thickens. Add the kofta balls and let simmer on low heat for 5 minutes, then remove from heat.

Serve with brown rice, bulgur with vermicelli, salad, or boiled or roasted potatoes.
