I make a batch of this for an easy help yourself meal during the busy week. It’s also a crowd pleaser. It yields about 24 large meatballs.

I make a batch of this for an easy help yourself meal during the busy week. It’s also a crowd pleaser. It yields about 24 large meatballs.
Cooking Instructions

For the meatballs: preheat the oven to 350f. Mix the eggs, 2 slices of the crumbled bread, 3 garlic cloves pressed or diced, garlic powder, 1T of dried oregano, 1/4 c canned crushed tomatoes, 2T olive oil, salt and pepper till all incorporated then add the ground turkey mix it all together. Roll into 1/4 c sized meatball or any size you like and bake till done, about 15-20 min.

While the meatballs are baking, in a large pan or dutch oven heat 3T of olive oil. Add onion, pepper, 1T dried oregano and cook until starting to soften.

Add 2 slices of crumbled bread and more olive oil if the pan is too dry. Cook for a few min until the bread starts to soften into the mixture add salt pepper and wine. Let it bubble for a min or 2.

Add the remaining canned tomatoes, crushed garlic and 4T of olive oil. Let it simmer for a few min stirring. Add the meatballs and set the heat on low for about an hr. Alternatively you can place the sauce and meatballs in a slow cooker set on low for a few hrs.

Serve on rolls, with pasta or with rice. We usually have it with a quick side salad.
