Wash and scrape the outer side of the karelas. Do not throw away the peels.

Remove the seeds. Apply salt and turmeric powder all over and keep the karelas aside for 1 hour.

In the meantime, make the stuffing. Heat 1 tsp of oil in a pan and add onion, garlic and peanuts. Saute till nice golden brown. Add the coconut and mix for just a minute. Note that dessicated coconut turns brown very fast.

Let it cool and then grind it into a fine paste along with some coriander leaves.

Squeeze out all the water from the karelas and scarped peel with the help of your palms.

Now heat 1tsp oil in the same pan and saute besan flour and the karela peels.
Then add the grinded paste, salt,mango powder, turmeric powder,red chilli powder.
After a minute switch off the stove. - 7
Stuff the karelas well with the stuffing and saute on a pan. cover the pan and cook for 10 mins. Flip the karelas and again cook for 10mins.

This recipe can also be used for gravy. Use the same method and ingredients and add some water at the end accordingly.
