Peach Tea (Trà đào)

We have a white-fleshed peach tree at home. Every year it bears fruit. In spring, we enjoy the peach blossoms, and after the season ends, we get to savor the sweet, fragrant fruit. So, I always make preserves, drinks, or toss them in salads to enjoy peaches before the season is over.

Steep the tea bag in hot water to make a strong brew. (This tea bag has ginger mixed in, which gives it a unique flavor!) Peel the peaches and cut the orange into wedges, then toss them with the sugar to let them absorb the sweetness.

Once the sugar has dissolved and the fruit has absorbed it, transfer to a saucepan, add 1 cup cold water, and simmer until the peaches are just slightly soft. Remove the peaches and place them in a bowl of ice water. Once the syrup has cooled, arrange the peaches in a jar, pour the syrup over them, seal, and store in the refrigerator.

To serve, add peaches to a glass, pour in 1 tablespoon of the syrup, then add the peach tea. Stir in 1 teaspoon honey if desired, squeeze in a little orange juice, add crushed ice, and garnish with orange and cherries.
