Cooking Instructions

Take the whole chicken breast and cut it into bite-sized pieces. Place them in a bowl with finely chopped garlic and a drizzle of extra virgin olive oil.

Mix everything and let it marinate for 15 minutes. Meanwhile, wash the bell peppers, cut them into pieces the size of the chicken, and add them to the bowl with the meat. Wash and peel the potatoes, cut them, and add them to the same bowl.

At this point, add salt, pepper, breadcrumbs, and Parmesan cheese. Mix everything until both the chicken and vegetables are coated and sandy.

Place the sandy chicken with potatoes and peppers in a baking dish lined with parchment paper and drizzle with extra virgin olive oil. Bake for about 45 minutes at 375-400°F (190-200°C), adjusting based on your oven.

When ready, remove from the oven and serve the sandy chicken with potatoes and peppers hot.

TIP:
If you have leftovers (I DOUBT IT!!!), it will be great cold the next day.
