Vegetable Spinach Bed:
Add half cube of garlic butter in wide pan. Melt it in low flame.
Once melted add spinach and saute for 1 minute. Don't overcook the spinach. Remove the spinach and transfer to warmer plates. Arrange as a bottom layer.
Now melt remaining butter add sliced carrots, courgette. Saute 30 seconds, remove and arrange middle layer. Season it.

Fish:
Wash the fish fillets in cold water, rub with kitchen towel to remove excess of water.
Now season with salt and pepper, keep aside for 15 minutes.
Heat olive oil in wide pan place the skin side down. Cook 2 minutes until the skin begin to crisp. Now add knobs of garlic butter around the each hake filler and cook another minute until skin is crisp.
Turn the hake fillets over and cook another 3-4 minutes until cooked thoroughly. Cook in medium or low flame.

Once don transfer over the veg bed. Now lets begin to prepare the sauce. Add the rest of the butter to the frying pan, Once melted add a squeeze of lemon juice and mixed herbs. Mix to combine and season it. Take a spoon full of sauce and pour over each fillet. Serve hot. Yummy fish supper is ready
