Ingredients

  1. 1/2 bowlomena
  2. 3tomatoes blended/grated or finely chopped
  3. 1green/ fresh Chillie
  4. 1/4 teaspoonsalt
  5. 1onion finely chopped
  6. Enough cooking oil

Cooking Instructions

    Step1.
    Chagua omena vizuri (to do away with the shells and tiny grass)

    Then in a sufuria..add in water.. kidogo tu
    Add in your omena and let it boil for like 3 minutes (don't let it over boil)

    Drain the hot water...in a clean bowl... pour in cold water...
    Rinse your omena(boiling removes the bitter taste)..that is why I love boiling instead of soaking in hot water.

    Now in a pan... pour in oil..when it's ready...add your omena and spread...
    Reduce your heat..it shouldn't be too much

    Cover your pan or your non-stick pan or sufuria...and let your omena cook..

    Keep on checking to avoid it burning

    Let it cook till it turns golden brown and crunchy.
    And set aside.

    In a clean pan...add in oil.. shouldn't be much..let it cook and add in onions...let the onions cook till translucent/sautéé them and add chillies....(I add chillies at this point to allow it cook to a sweet peppered taste...

    Add your tomaroes...stir..and cover with a lid..
    If it sticks to your pan...add in maji kidogo..stir and cover..
    Let it cook till it starts turning thick..

    Then add in your omena... gently turn..add allow it cook for 3-5 minutes...to achieve a thick sauce...

    You can add in your dhania/coriander and serve...or you can just serve it as it is...
