This is one of my favourite salads to make for a quick and easy lunch. It's packed with flavour and filling but low in calories and fat. Basically it tastes exactly like a chicken fajita but minus the tortilla wrap!

100-150 gsliced chicken,
1/2sliced red bell pepper,
1/2red onion, sliced,
Shredded lettuce and/or mixed salad leaves, washed,
Spray cooking oil for frying
For the fajita seasoning:
1 tspsmoked paprika,
1/2 tspGarlic granules,
1/4 tspcayenne pepper,
1/4 tspChilli flakes,
Salt & pepper
Toppings:
Grated reduced fat cheese,
Fat free quark or low fat soured cream,
Hot sauce, for example chipotle,
slicesBrined Jalapeño

Add the lettuce and salad leaves to a bowl mix together. Heat up a frying pan until hot over a medium high heat and add in the chicken pieces. Spray well with oil and toss in the pan to coat. Fry until opaque on all sides. Add in the sliced onion and peppers.

Toss everything together and continue to fry until the onions begin to soften. Now add in all of the fajita seasonings. Season with salt and pepper to taste. Toss it through and ensure it coats everything well.

Once cooked pile it on top of the salad leaves. Grate over some cheese then add your toppings. Eat and enjoy! :)
