Ingredients

1pineapple, peeled eyes removed and diced
1large English cucumber, peeled and diced
1red onion, finely sliced
1large red chilli, sliced
1 bunchcoriander, washed and torn
1 bunchchives, finely sliced
Salsa Dressing
2 tablespoonsfreshly squeezed lime juice
1 tablespoonTamari
1 tablespoonrice vinegar
2 tablespoonsextra virgin olive oil

Combine all Salsa ingredients. Conbine Salsa dressing in a glass jar. Close the lid and give the jar a good shake to combine all the dressing ingredients. Drizzle dressing over the Salsa and gently toss, serve and Bon Appétit!
