Ingredients

  1. 1pork tenderloin
  2. 1small onion (cut in squares)
  3. 1bell pepper (cut in 1” squares)
  4. 2baby bok choy (top leaves and quarter)
  5. 3large mushrooms sliced
  6. 1jalapeño sliced (optional if you want some heat)
  7. Black pepper for seasoning
  8. 2 Tbspoil divided
  9. Stir Fry Sauce
  10. 1 cupchicken broth
  11. 2 Tbspsoy sauce
  12. 3 Tbsplemon or lime juice
  13. 1 Tbspfish sauce
  14. 1 tspsesame oil
  15. 1 Tbspcorn starch
  16. Pork Marinade
  17. 1/4 cupsoy sauce
  18. 5 Tbspseasoned vinegar
  19. 1 Tbspsriracha sauce
  20. 1 Tbspmirin seasoned sake
  21. 2 Tbspbrown sugar
  22. 1/4 tspground ginger
  23. 2 Tbsppeanut oil
  24. 2 clovesgarlic pressed

Cooking Instructions

    Made the stir fry sauce by mixing the chicken broth, soy sauce, lemon juice, fish sauce, sesame oil, and corn starch in a container.

    Make the pork marinade by mixing soy sauce, mirin, brown sugar, sriracha sauce, ground ginger, garlic, vinegar, and peanut oil in a container.

    Cut pork tenderloin into cubes. If you cut the cubes too small the pork will have a tendency to dry out. Mix with the pork marinade and let sit for at least 30 minutes.

    Add 1 Tbsp oil (I use chili infused olive oil) to a skillet. Over medium heat add the marinated pork to the skillet. Stir pork and cook to a medium rare (about 120 F). Remove to a plate. We will finish the cook later.

    Add another Tbsp of oil to the skillet. Add the vegetables and season with black pepper. Cover skillet and cook until softened.

    Add stir fry sauce to skillet along with the pork and cherry tomatoes. Bring to a boil to thicken sauce and finish cooking the pork.

    Plate the pork stir fry and serve with rice. Enjoy.

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her. Although I will never be as good of a cook as her she did pass on her passion for cooking. Therefore, I will attempt to carry on her legacy and maintain/update her site. My wife was a Registered Nurse, a licensed deep water aerobics instructor, a mother to our 2 children and a fantastic cook. We grew up in New England but have been fortunate to live all over the US. I am now retired, missing her terribly, but thankful for all the years we had together and all her cooking lessons.
